Introduction

Iodine is vital for human health, with recommended daily intakes of 90–150 μg depending on age. Though deficiency is rare in the U.S. and Canada, it remains a global concern. Excess iodine can also be harmful. As salt consumption in the U.S. has changed over time, iodine levels in salt must be carefully regulated. Inductively coupled plasma optical emission spectroscopy (ICP-OES) is an effective method for measuring iodine in salt due to its accuracy in analyzing high-salt, complex samples.
